Super Easy Apple and Blackberry Pastry

With Autumn suddenly very obviously upon us, I’ve come over all inspired to cook warm comforting food. Although there are of course a lot  of foods that make me feel all warm and cosy and generally just happy that the days are getting more chilly- hot chocolate anyone? I do think that two of my favourite seasonal flavours are apples and blackberries.

Were lucky to have our own apple tree in the garden so we get apples in abundance every Autumn. I mean boxes and boxes full!  I always feel that I need to put them to good use. Blackberries are in all sorts of hedgerows at this time of year too so you can pick them in the wild if you feel like a little adventure. I however took the lazy option and went to Sainsbury’s for my blackberries.  This recipe was inspired by a more summery pastry I saw on The Londoner- one of my absolute favourite food blogs so the results were really good!

Ingredients

3 big cooking apples (or any old apples will probably do)

2 boxes of blackberries

2/3 Tbsps granulated sugar plus extra for sprinkling

2/3 Tbsps Flour (plain or self raising)

Ready to roll puff pastry

Milk or 1 egg for brushing

Method

  1. Pre heat oven to 200 C.
  2. Peel and slice apples. Place into a bowl of water while they wait to avoid them going discoloured.  Wash blackberries.
  3. Once fruit is drained, coat with the sugar and flour in a bowl.
  4. Cover a baking tray in grease proof paper if necessary (my pastry came with paper already attached)
  5. Carefully roll pastry onto tray and evenly top with the fruit mixture.
  6. Fold over the edges of the pastry around the outside of the fruit to make a little crust.
  7. Brush the pastry with milk or egg.
  8. Sprinkle a little more sugar all over your creation.
  9. Bake for around 30 mins or until golden brown.

apple-pie-7I recommend serving this warm with a little cream or ice cream of your choice!
